Some tips on cooking potatoes

  • Russets bake well — high starch content.
  • Yukon Gold boil/fry well — lower starch content.

If ever you have spare potatoes, be prepared!

*fries. Also if you buy potatoes in bulk, find a surface that gets sun and lay them out there. This keeps them dry (preventing rot) and the sun prevents them from spouting
